If you follow me on Instagram then you know I’ve been obsessed with the chia pudding from Daily Dose Meals – it’s SO delicious & tastes like dessert but is also super clean :) They were so kind to share the recipe with me, so I wanted to share it with you all!
Chocolate Almond Butter Cup Chia Pudding
Yields: 4 servings
Ingredients:
1 cup coconut milk
2 tablespoons raw cacao powder
¾ teaspoon monk fruit
Pinch sea salt
¼ cup chia seeds
2 tablespoons raw almond butter
½ teaspoon extra virgin olive oil
Instructions:
- In a medium bowl, whisk together coconut milk, cacao powder, monkfruit and sea salt. Add in chia seeds and allow to bloom for 2 hours. Place in an container. Refrigerate for at least 2 hours.
- In a small bowl, whisk together almond butter and olive oil until light and fluffy.
- Spoon chia pudding into cups and garnish with a spoonful of whipped almond butter.
Fun fact: Did you know that chia seeds can hold up to 12 times their weight in water and can help you feel fuller longer.
