I’m not a big recipe person. Meaning, the things I make are not very complicated. For the most part, I only give myself the time for quick simple recipes. (Notice how I said “give” myself the time – I truly believe we can make time for anything we prioritize. I just don’t prioritize elaborate meals at this point in my life – someday that could change). :)
A lot of times I just throw things together and share them on social media. But I’m quickly learning that it’s just plain rude to share food without sharing the recipe :)
So, here is one thing I post a LOT, because I eat it a LOT. I was calling it my “chocolatey quinoa oats.” The name is a little misleading because oats aren’t involved, its just quinoa, but I eat it in the morning the same way I would oatmeal. So, lets call it “Chocolate Breakfast Quinoa.” Recipe below!
Ingredients:
- 1 cup quinoa, soaked in water overnight
- 2 cups water
- ¾ – 1 TBSP raw cacao powder
- 1 TSP vanilla extract
- Stevia to taste
- Cinnamon to taste
- Coconut or Almond milk
Instructions:
- Rinse quinoa, set aside
- Heat water in saucepan on medium heat, just under a boil
- Add quinoa, reduce heat slightly, and cook for 10-15 minutes (or until completely cooked)
- Once cooked, turn off heat and stir in seasonings
- Top with coconut or almond milk
*Note – one of you tried this recipe and said it was too bitter. If this is the case, add 1 TBSP of organic raw maple syrup or coconut nectar!
