I’ve been making this recipe on repeat because it’s SO GOOD. Riced cauliflower is a great rice substitute, but you definitely have to cook it the right way. Here’s my Thai, coconut-inspired cauliflower fried rice recipe:
Ingredients:
For the sauce:
- ¼ cup coconut cream
- 2 tsp lime juice
- ½ tsp fresh grated ginger
- ¼ tsp garlic powder
- ¼ tsp sea salt
- 1 tbsp coconut aminos
For the rice:
- 1 red onion
- 3 cloves garlic
- Zucchini
- Celery
- Broccoli
- 3-4 cups riced cauliflower
- Raw coconut oil for sautéing
Instructions:
- Mix all the ingredients for the sauce together and set it aside.
- Chop up all the veggies.
- Sauté the onions and garlic in coconut oil at medium/medium-high heat until they become translucent and fragrant. Add the rest of the veggies to the pan, adding more coconut oil as needed.
- Once the veggies start to cook, add in the riced cauliflower and stir.
- Finally, mix in the sauce.
- Serve & enjoy!
This recipe is so good, so filling because of all the fiber, and it really satisfies you like fried rice would. I hope you enjoy it as much as I do :)
